It's true. Mint Chocolate Chip ice cream is my FAVORITE. And for years, my loving husband would make fun of me for eating it, saying it was weird and un-traditional and butter pecan was waaay better. One day, I had had enough of his mocking and I insisted he try some. To say he ate his words, would be...well, accurate. He loved the stuff. Because let's face it, it is AMAZING.
And now for the results. These are WONDERFUL. (New adjective- yay me!) My loving husband has ranked them in his Top 3 of this experiment and I think I can confidently say the same. If you like mint and you like chocolate, then rush to the store to pick up these chips while you still can. Pour yourself a glass of milk and thank me later.
So when I found these little special edition dark chocolate and mint chips in the holiday section of my local grocery store, I snagged them knowing there had to be some recipe out there for mint chocolaty cookies, which would resemble my favorite ice cream, which would ultimately make me extremely happy. I pulled the recipe from the back of the bag so I am sorry I don't have a link for this one.

One of Niles's fam favorite cookies is the Recees PB chips made with a chocolate cookie. Sound like these, but with diff chips!
